Spicy Lentil Soup

Ingredients:

2 tablespoons olive oil

1 large onion, chopped

2 carrots, chopped

2 celery stalks, chopped

4 garlic cloves, minced

2 teaspoons ground cumin

1 teaspoon ground coriander

1/2 teaspoon cayenne pepper

1/2 teaspoon salt

1/4 teaspoon black pepper

1 (14.5 ounce) can diced tomatoes, undrained

1 (15 ounce) can lentils, rinsed and drained

4 cups vegetable broth

1/2 cup chopped cilantro


Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
